Ranchers Eggs Recipe International Cuisine (Mexico) Ingredients: 2 tomatoes 1 small onion 2 cloves garlic 4 tortillas 4 eggs Salt to taste Pepper to taste Olive oil to taste Preparation: Clean the tomato skin and seeds, chop it as onion. Beat both in a blender with crushed garlic. Season with salt and pepper and cook until slightly thickened, set aside. Heat the oil and pass the tortillas the same on both sides, to heat. Estrele an egg, being careful to not blow the yolk. Place each tortilla on a plate and cover with the tomato sauce. Put the fried egg on top of each and serve. I hope you enjoy.
